Recipe of the Month

Each month, we get all the guys ‘n’ gals at I Just Love It Towers to submit a recipe, and then we pick the best one. And this month, our lovely PR Manager, Sophie Collier, picked this rather scrumptious banana egg pancake recipe. Yum!


What’s more, you can make it in a jiffy using just two ingredients – banana and eggs. It’s true, we promise. One banana and two eggs will rustle up a cracking pancake for one person – not to mention one that’s crammed with vitamin B6 which you normally find in fish and meat.


This vitamin helps prevent skin rashes, fatigue and mood swings and is used with over 100 different enzymes in the body. Not only that, they’re loaded with manganese which is key in bone creation, skin integrity and for controlling blood sugar.


Plus, it safeguards your skin from free radicals and skin problems and can even ease asthma. And if that wasn't enough, they're full of loads of fibre, potassium and protein. Get in.


Sophie tops hers with low fat Greek yoghurt and berries to make it extra yummy.


The Two-Ingredient Banana Egg Pancakes


PREP TIME 3 mins COOK TIME 7 mins TOTAL TIME 10 mins


• 1 banana

• 2 eggs


1. Mash up bananas in a large bowl

2. Whisk eggs and add to banana paste

3. Fry in a pan with a little heated oil or butter Why not pimp these pancakes up with the below ingredients?


• 1 tbsp of coconut powder

• A small handful of hazelnuts, almonds or walnutS

• 1 tbsp of peanut butter (we LOVE that combo!)

• 1 tbsp of protein powder

• 1 tbsp of raisins

• 1 tsp of cinnamon

• 1 tsp of vanilla extract

• A few thin slices of apple or pears


• Honey

• Maple syrup

• Cherries, strawberries

• Yogurt • Sugar and lemon juice
