Recipe of the Month: Caramel Mud Pie

By Fumiaki Yoshimatsu (originally posted to Flickr as Mud Pie) , via Wikimedia Commons

It’s that time again... for the recipe of the month. Yippee!

As you can see from previous months’ recipes, we’re hardcore sweet-tooths here at IJLI Towers.

So far, we’ve covered banana egg pancakes, fudgy brownies and last month, it was salted caramel millionaire’s shortbread.

And this week? It’s Caramel Mud Pie, courtesy of our Digital Marketing Manager, Paul Sheridan.

Recipe of the Month: Healthy Fudgy Brownies

With baking fever sweeping the country once more, why not have a stab at making one of our recipes of the month, submitted by members of the I Just Love It crew? Last month, it was pancakes and this month, it’s chocolate brownies! (We must warn you...they're devilishly good and terrifically healthy - what more could you want!)

Our lovely Buying Administrator, Steph Hewison, sent us this tasty (and healthy!) Fudgy Avocado Brownies recipe. Yum! And guess what? These brownies are grain-free, gluten-free, flourless, low far, contain lower sugar...but you’d never know it. And don’t be put off by the avocados; the brownies have been tried and tested here in the office, and we can safely say they’re one of the best fudgy brownies we’ve ever had.

Recipe of the Month

Each month, we get all the guys ‘n’ gals at I Just Love It Towers to submit a recipe, and then we pick the best one. And this month, our lovely PR Manager, Sophie Collier, picked this rather scrumptious banana egg pancake recipe. Yum!

What’s more, you can make it in a jiffy using just two ingredients – banana and eggs. It’s true, we promise. One banana and two eggs will rustle up a cracking pancake for one person – not to mention one that’s crammed with vitamin B6 which you normally find in fish and meat.

Recipe of the Month: Millionaire's Shortbread

Can you believe it’s the Great British Bake Off final tonight? Already?

We’re feeling the baking fever here at I Just Love It Towers, so every month, a member of our team submits a recipe then we pick out – what we think – is the best one.
